18 months ago, Charlotte opened her restaurant Chicons Pressés in the city center of Lille. A positive place, where people feel good, and which needed legs to create unique tables with a warm design. Charlotte opens her restaurant to us and shares the history of Chicons Pressés with us.
WHERE DO YOU WANT TO OPEN A RESTAURANT? ?
Based in Paris, I was product manager at La Française des Jeux for 4 years; I had a plan to come back to live in the North. I have always had a taste for entrepreneurship and I love the restaurant business: it's dynamic, it's always on the go. I was able to work on it and find that people wanted a healthy and quick breakfast ... but there was also a great waste of food for lack of a suitable portion. Protecting our environment, minimizing our carbon footprint are very dear to me, it is really part of my values. It is with this in mind that I created Chicons Pressés: a place where we land for healthy and quick lunch and where you eat on real plates! The portions are adapted: each one composes his plate with the dishes cooked each day from local ingredients. The particularity of Chicons Pressés is that we pay by weight, which really minimizes the waste: here we do not waste!
WHERE DO YOU FIND YOUR IDEAS?
I think I am a curious person and I like to share what I discover with others. I had a blog where I shared the good addresses of freelancers, artisans. Since it is more on Instagram that I draw my inspiration: I follow blogs, I find cooking recipes for Chicons Pressés, decorating ideas.
It's also in my grandmother's attic that I go hunting: I like to recycle, to make something beautiful with old things, to do unique things: I don't like what is standard and common.
WHAT IF WE PUT OUR FEED IN THE DISH?
We are fortunate to have in the region a rich fabric of entrepreneurs, craftsmen, who create beautiful things, with whom I share the same values of authenticity and quality. I wanted the tables Chicons Pressés are an extension of the dishes offered, that is to say elegant, quality and locally produced. I couldn't find what I wanted in standard restaurant supplier catalogs. It was on Instagram that I discovered La Fabrique des Pieds. I chose the pin feet, I liked their design and they blended in perfectly with the overall harmony of the restaurant. I took a mix: blacks, whites and golds.
At La Fabrique des Pieds, it was more than feet that I found, I found advice. The team helped and accompanied me to find the right table tops. The assembly was, just easy !
